Perfect Mitani Chicken Salt Chips
Some would say the reason chicken salt was created and there’s still no better addition to hot chips.
Ingredients
Mitani Chicken Salt
6 large potatoes
1 litre of vegetable oil (suitable for deep frying)
Method
- Wash the potatoes. Slice whole (unpeeled) potatoes width ways into 7-10mm slices.
- Rinse the potatoes in cold water until water runs clear.
- Drain the potatoes and remove any excess moisture with a tea towel.
- Heat half the oil over a medium heat in a large, thick bottomed pan enough until it reaches a moderate frying temperature.
- Par cook the potatoes in the oil for 10-15 minutes.
- Remove the potatoes with a slotted spoon and drain on a paper towel.
- Add the other oil into a fresh large, thick bottomed pan enough until it reaches a hot frying temperature.
- Return the potatoes to the hot oil and fry until golden and crispy.
- Remove the potatoes with a slotted spoon and drain on a paper towel.
- Sprinkle liberally with Mitani Chicken Salt. Serve immediately.
